Smells So Good

My husband is cooking and it’s really smelling delicious. Tonight he’s trying out Emeril’s Filipino Adobo-Style Chicken Thighs. This is a wonderful recipe because all we had to buy was the chicken. Everything else is stuff we generally keep on hand.

The dish is supposed to be served over Emeril’s Aromatic Jasmine Rice. My son-in-law got me hooked on jasmine rice a few years ago. I don’t think I’d want to go back to the plain white rice. We don’t have all those ingredients on hand. No fresh lemongrass, no fresh lime leaves, no coconut milk, no crushed peanuts. We’ll be improvising, but jasmine rice is so good, the dish will still be great.

    We had pizza with a homemade base and sauce. I doubled the dough recipe, though, so I ran out of sauce on the third pizza. It therefore became a white pizza. Fresh basil scattered over all. Scrumptious, but those chicken thighs sound real good. How come he never cooked when I was there?

    um, we were wanting you to cook. Make biscuits and grilled cheese sandwiches and dumplings. Or we were accompanying you to get a Sonic hamburger or fried shrimp or we were all hoping Aunt Juanita would show up with food :-)

    And next time you visit, I’ll be expecting some homemade pizza. I love white pizza, btw.

    I am making a salt crusted chicken and some fresh veggies… if I can get my butt out of bed. ;-P

    I’ve read some recipes for salt crusted chicken and it sounds fabulous, but I haven’t tried it yet. For whole chickens, our family favorite is drunken chicken on the grill, but using Dr. Pepper or Coca-Cola instead of beer.

    There’s a lot of incentive here to not cook inside during the summer, which lasts from the end of February to the end of November.

    I am fighting the urge to yell “BAM!”. I had my homemade chili that I make by the potfull and freeze in portions. Deeeeelish I say! I tend to make lots of homemade chili/soup/clam chowder because of food allergies, so I have a freezerful of stuff.
